- 4 thick slices sourdough or whole wheat bread
- 200 grams ricotta cheese
- 4 tbsp pure honey
- 40 grams toasted walnuts or almonds, roughly chopped
- 50 grams dried fruit (raisins, apricots, or chopped dates)
- 1 piece/serving, to taste fresh fruit (strawberries, pear, or peach), thinly sliced
- 2 tbsp extra virgin olive oil
- 1/2 tsp ground cinnamon
- to taste fresh mint leaves, for garnish
- a pinch fine sea salt

- 1 Heat a nonstick pan or toaster over medium heat. Lightly brush both sides of the bread with olive oil.
- 2 Toast the bread for about 2-3 minutes per side until golden brown and crisp on the outside, but still soft on the inside.
- 3 While the bread is toasting, mix the ricotta with a pinch of sea salt and ground cinnamon in a small bowl, stirring until smooth.
- 4 Remove the toasted bread and spread the ricotta mixture evenly over each slice while it's still warm.
