Purwakarta's signature beef satay with a marinade that makes the meat tender and sweet-savory! The beef is cut into fairly large chunks, marinated in sweet soy sauce and pineapple, then grilled until the edges are caramelized. The aroma of sate maranggi on the grill is truly unbeatable.

- 500g beef tenderloin (cut into 2cm cubes)
- 5 tbsp Marinade: sweet soy sauce
- 3 tbsp pineapple juice
- 5 shallots, ground fine
- 3 clove garlic cloves, ground fine
- 1 inch piece ginger, grated
- 1 tsp ground coriander
- 1/2 tsp pepper
- 1 tsp salt
- 2 tbsp cooking oil
- To serve: Lontong (compressed rice cakes)
- Sambal oncom (fermented soybean cake chili sauce)
- Pickled cucumber (acar)

👩🍳 Instructions
- 1 Mix all the marinade ingredients together until well combined
- 2 Add the beef to the marinade and toss until evenly coated
- 3 Marinate for at least 2 hours in the fridge — overnight is ideal
- 4 Thread the beef onto skewers — 4-5 pieces per skewer
- 5 Heat up charcoal embers or a grill pan
- 6 Grill the satay, turning occasionally and brushing with the remaining marinade
- 7 Grill until the edges are caramelized but the inside is still juicy — about 8-10 minutes
- 8 Serve with lontong, sambal oncom, and pickled cucumber
💡 Tips
• The pineapple in the marinade acts as a natural meat tenderizer
• Marinate for at least 2 hours — the longer, the more tender and flavorful the meat becomes
• Grill over real charcoal embers for that authentic smoky aroma
• Don't cut the meat too small — sate maranggi is known for its large chunks of meat
