  • Sei sapi (smoked beef): 500g whole sirloin beef
  • 3 tbsp sweet soy sauce (kecap manis)
  • 2 tbsp salty soy sauce (kecap asin)
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp black pepper
  • 1 tsp ground coriander
  • 1/2 tsp ground nutmeg
  • Liquid smoke 1 tsp (optional)
  • Sambal lu'at (roasted chili sambal): 10 bird's eye chilies
  • 5 shallots
  • 3 cloves garlic
  • 2 tomatoes
  • 1 tbsp lime juice
  • 1 tsp salt
  • To serve: warm steamed white rice
  • basil leaves
  • sliced cucumber
  • fried shallots

👩‍🍳 Instructions

  1. 1 Sei sapi (smoked beef): mix together all the marinade ingredients
  2. 2 Coat the whole piece of beef with the marinade and let it rest in the fridge for at least 4 hours (overnight is ideal)
  3. 3 Grill the beef on a grill pan or bake in the oven at 180°C (350°F) for 25-30 minutes
  4. 4 Turn occasionally and baste with the remaining marinade
  5. 5 Let it rest for 10 minutes, then slice thinly against the grain
  6. 6 Sambal lu'at (roasted chili sambal): char the chilies, shallots, garlic, and tomatoes in a dry non-stick pan until slightly blackened
  7. 7 Coarsely crush all the roasted ingredients, then add lime juice and salt
  8. 8 Assemble the rice bowl: place warm rice in a bowl or box
  9. 9 Arrange the sliced sei sapi on top
  10. 10 Add the sambal lu'at on the side
  11. 11 Top with basil leaves, cucumber, and fried shallots
