  • 2 pieces (about 400 grams) Boneless chicken breast fillet
  • 1 tsp Garlic powder
  • 1 tsp Paprika powder
  • 1 tsp Salt
  • 1/2 tsp Ground black pepper
  • 2 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 1 medium head (about 500 grams) Cauliflower
  • 100 ml Cooking cream or full-cream milk
  • 3 tbsp Grated parmesan cheese
  • 2 cloves Garlic, finely minced
  • 1/2 tsp Salt for the mash
  • 1 tbsp (optional) Chopped parsley for garnish

👩‍🍳 Instructions

  1. 1 Cut the cauliflower into small florets, wash thoroughly, then boil in lightly salted boiling water for 10-12 minutes until very tender. Drain and let the steam die down for a bit.
  2. 2 While waiting for the cauliflower, coat the chicken breast evenly on both sides with garlic powder, paprika powder, salt, and black pepper. Let it sit for 10 minutes so the seasoning soaks in.
  3. 3 Heat the olive oil in a non-stick skillet over medium heat. Cook the chicken for 5-6 minutes on one side until golden brown, then flip.
  4. 4 After flipping, add the butter to the pan, let it melt, then spoon it over the chicken (basting) while cooking for another 5-6 minutes until fully cooked through. Remove and let the chicken rest for 3 minutes before slicing.
  5. 5 For the mash, put the boiled cauliflower, minced garlic, cooking cream, and salt into a blender or food processor. Blend until smooth and creamy, like mashed potatoes.
  6. 6 Transfer the mash to a small saucepan, cook briefly over low heat while stirring, add the grated parmesan cheese, and stir until melted and well combined. Adjust the seasoning to taste.
  7. 7 Serve the cauliflower mash on a plate, place the chicken steak on top or alongside it, and sprinkle with chopped parsley if desired. Serve warm.

💡 Tips

• Don't overcook the cauliflower when boiling, but don't undercook it either, as this can keep the mash from becoming perfectly smooth.

• If you want a thicker mash, drain the cauliflower until completely dry before blending.

• Basting the chicken with butter at the end of cooking makes the flavor richer and gives the chicken a beautifully glossy surface.

• You can swap the chicken breast for boneless chicken thigh fillet if you prefer a juicier texture.
