  • 2 blocks Firm white tofu
  • 2 large Chicken eggs
  • 1 bunch Fresh spinach, trimmed
  • 3 cloves Garlic, finely minced
  • 2 cloves Shallots, thinly sliced
  • 1 piece Carrot, thinly sliced
  • 800 ml Fat-free chicken broth (or plain water + mushroom stock powder)
  • 2 stalks Green onions, sliced
  • 1 tbsp Olive oil or vegetable oil
  • 1/2 tsp Salt
  • 1/4 tsp Ground pepper
  • 1/2 tsp Mushroom stock powder or low-sodium seasoning (optional)

👩‍🍳 Instructions

  1. 1 Cut the firm white tofu into small 1-2 cm (about 1/2-inch) cubes. Set aside.
  2. 2 Beat the 2 eggs lightly in a small bowl and set aside.
  3. 3 Heat the olive oil in a pot over medium heat, then sauté the garlic and shallots until fragrant and lightly golden.
  4. 4 Add the sliced carrot and sauté briefly, about 1-2 minutes, until slightly softened.
  5. 5 Pour in the broth, stir well, and cook over medium heat until it comes to a boil.
  6. 6 Once boiling, add the tofu cubes and let it return to a boil for 3-4 minutes.
  7. 7 Slowly pour in the beaten eggs while stirring in a circular motion so the eggs break into fine, delicate ribbons.
  8. 8 Add the spinach, salt, pepper, and mushroom stock powder. Cook for just 2 minutes so the spinach doesn't overcook and stays vibrant green.
  9. 9 Finally, add the green onions, stir briefly, taste and adjust seasoning, then turn off the heat.
  10. 10 Serve the soup warm in serving bowls.

💡 Tips

• Use fat-free chicken broth (skim off the fat layer after chilling) to keep the calories low while still keeping the flavor rich and savory.

• Add the spinach last and avoid overcooking it so its nutrients and vibrant green color are preserved.

• You can add shredded boiled chicken breast for extra protein if you'd like a more filling portion.

• This soup is best enjoyed piping hot, making it a great light dinner option without worrying about excess calories.
