- 200g low-protein all-purpose flour
- 150g butter
- 60g powdered sugar
- 2 egg yolks
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- Strawberry jam, to taste
- 30g sliced almonds for garnish (optional)

👩🍳 Instructions
- 1 Beat the butter and powdered sugar together until pale and fluffy
- 2 Add the egg yolks one at a time along with the vanilla extract, and mix until well combined
- 3 Sift the flour and salt, then add to the batter
- 4 Mix until the dough comes together and can be shaped
- 5 Scoop the dough and roll into balls about the size of a large marble
- 6 Arrange on a baking sheet, then press the center of each with your thumb or the end of a wooden spoon
- 7 Bake in the oven at 300°F (150°C) for 15 minutes
- 8 Remove from the oven and press the centers again if they've puffed up and closed
- 9 Fill the indentations with strawberry jam
- 10 Sprinkle sliced almonds around the edges if desired
- 11 Bake again for 8-10 minutes
- 12 Let cool on the baking sheet before transferring
💡 Tips
• Press the center of the cookies twice — before and after the first bake — so the indentations are deep enough
• Don't overfill with jam so it doesn't overflow
• You can swap in other jam flavors: blueberry, raspberry, or pineapple
