👩🍳 Instructions
- 1 Cut the tempeh into small cubes or matchsticks, as you prefer, then steam for 5 minutes to make the texture softer and prevent it from absorbing too much oil when sautéed.
- 2 Heat the olive oil in a non-stick pan over medium heat, then sauté the shallots and garlic until fragrant and softened.
- 3 Add the bay leaf and galangal, and stir briefly until their aroma is released.
- 4 Add the large green chilies and green bird's eye chilies, and sauté for 1-2 minutes until the chilies soften slightly but still look fresh in color.
- 5 Add the steamed tempeh, and stir well with the seasoning for 2 minutes so the tempeh is evenly coated.
- 6 Pour in the water, then add the green tomato, powdered broth seasoning, salt, and low-sugar sweet soy sauce. Stir well.
- 7 Cook over low-medium heat for 5-7 minutes, stirring occasionally, until the water reduces and the seasoning is absorbed.
- 8 Turn off the heat, add the basil leaves, and stir quickly until wilted (don't overdo it, so the basil keeps its color and fresh aroma).
- 9 Remove from heat and serve warm with red rice or shirataki rice for a more complete diet meal.
💡 Tips
• Steaming the tempeh before sautéing helps reduce oil absorption, keeping the calorie count more controlled.
• Use large green chilies as the main chili so the dish isn't too spicy while still staying fresh and savory.
• For an even lower-calorie version, replace the sweet soy sauce with a little liquid palm sugar or leave it out entirely.
• Store in an airtight container; it will keep for 2 days in the fridge and makes a great daily meal prep option.
