  • 300 grams Fresh shrimp, peeled, tails left on
  • 2 Zucchini, sliced into half-moons
  • 4 cloves Garlic, finely minced
  • 1/2 Onion, thinly sliced
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1 tbsp Oyster sauce
  • 1 tsp Low-sodium soy sauce
  • 1/4 tsp Salt
  • 1/4 tsp Ground black pepper
  • 1 tsp Lime juice
  • 1 stalk Green onion, sliced
  • 1 Curly red chili, sliced diagonally (optional)

👩‍🍳 Instructions

  1. 1 Rinse the shrimp thoroughly, rub with a little salt and lime juice, and let sit for 10 minutes to remove any fishy smell.
  2. 2 Heat the butter and olive oil in a skillet over medium heat.
  3. 3 Sauté the garlic and onion until fragrant and slightly golden.
  4. 4 Add the shrimp and cook, stirring, until they turn pink and are about half cooked, roughly 2-3 minutes.
  5. 5 Add the zucchini, stir well, and cook for 3-4 minutes until slightly softened but still crisp.
  6. 6 Pour in the oyster sauce, soy sauce, salt, and black pepper. Stir well until everything is evenly coated with the seasoning.
  7. 7 Add the sliced red chili if you like it spicy, and cook for 1 more minute.
  8. 8 Taste and adjust the salt if needed. Turn off the heat and sprinkle with sliced green onion.
  9. 9 Serve immediately while warm as a satisfying lunch or dinner.

💡 Tips

• Choose zucchini that's fresh and firm so it doesn't release too much water while stir-frying.

• Don't overcook the shrimp so they stay tender and don't turn rubbery.

• You can substitute the shrimp with diced chicken breast or tofu for a different protein option.

• For a creamier result, stir in a little low-fat heavy cream at the end of cooking.
