👩🍳 Instructions
- 1 Rinse the shrimp thoroughly, rub with a little salt and lime juice, and let sit for 10 minutes to remove any fishy smell.
- 2 Heat the butter and olive oil in a skillet over medium heat.
- 3 Sauté the garlic and onion until fragrant and slightly golden.
- 4 Add the shrimp and cook, stirring, until they turn pink and are about half cooked, roughly 2-3 minutes.
- 5 Add the zucchini, stir well, and cook for 3-4 minutes until slightly softened but still crisp.
- 6 Pour in the oyster sauce, soy sauce, salt, and black pepper. Stir well until everything is evenly coated with the seasoning.
- 7 Add the sliced red chili if you like it spicy, and cook for 1 more minute.
- 8 Taste and adjust the salt if needed. Turn off the heat and sprinkle with sliced green onion.
- 9 Serve immediately while warm as a satisfying lunch or dinner.
💡 Tips
• Choose zucchini that's fresh and firm so it doesn't release too much water while stir-frying.
• Don't overcook the shrimp so they stay tender and don't turn rubbery.
• You can substitute the shrimp with diced chicken breast or tofu for a different protein option.
• For a creamier result, stir in a little low-fat heavy cream at the end of cooking.
