- 200g leunca/turkey berries (picked from the stems)
- 150g red oncom (fermented bean cake), diced
- 5 shallots, sliced
- 3 cloves garlic cloves, sliced
- 5 chilies curly green chilies, sliced
- 2 leaves bay leaves
- 1 inch piece galangal, smashed
- 1 tsp salt
- 1/2 tsp sugar
- 2 tbsp cooking oil
- 50ml water

👩🍳 Instructions
- 1 Wash the leunca and drain.
- 2 Fry the oncom briefly in oil until slightly dry, then set aside.
- 3 Sauté the shallots and garlic until fragrant.
- 4 Add the green chilies, bay leaves, and galangal.
- 5 Add the leunca and stir for 2-3 minutes.
- 6 Add the fried oncom, stirring gently so it doesn't break apart.
- 7 Add the salt, sugar, and water.
- 8 Cook for 5 minutes until the leunca has wilted and the seasoning has been absorbed.
- 9 Adjust the seasoning to taste, then remove from heat.
- 10 Serve with warm white rice.
💡 Tips
• The leunca berries should be picked one by one from their stems and washed thoroughly.
• The oncom is fried first so it doesn't fall apart during stir-frying.
• Green chilies work better for this stir-fry than red chilies.
• Don't overcook it, so the leunca still retains some texture.
