- 1 In a large bowl, mix the flour, sugar, baking powder, salt, cocoa powder, and vanilla powder. Whisk well so there are no lumps.
- 2 In a separate bowl, beat the eggs lightly, then mix in the milk, melted margarine, and the dissolved coffee. Stir until well combined.
- 3 Pour the wet mixture into the dry mixture little by little while stirring with a spatula. Don't overmix—just stir until no more flour is visible (the batter can be a little lumpy).
- 4 Add the chopped cooking chocolate into the batter and stir briefly to combine. Let the batter rest for 10 minutes so the baking powder can work and the batter puffs up slightly.
- 5 Preheat the electric waffle iron according to the manufacturer's instructions (usually 4-5 minutes until the indicator light turns on/ready). Lightly grease the surface of the iron with margarine or oil.
