- 4 pieces chicken thighs (upper part)
- 5 Ground spice paste: shallots
- 3 clove garlic
- 1 inch piece ginger
- 1 tsp ground coriander
- 1/2 tsp pepper
- 1 tsp salt
- 3 tbsp Basting glaze: honey
- 3 tbsp sweet soy sauce (kecap manis)
- 2 tbsp melted butter
- 1 tbsp lime juice
- To serve: steamed white rice
- sambal (chili sauce)
- fresh raw vegetables (lalapan)

👩🍳 Instructions
- 1 Grind the spice paste ingredients, then coat the chicken evenly with it
- 2 Marinate for at least 1 hour in the refrigerator
- 3 Boil the chicken in the remaining marinade and 200ml water until half-cooked
- 4 Mix together the honey, sweet soy sauce, melted butter, and lime juice
- 5 Grill the chicken over hot coals or bake in the oven at 180°C (350°F)
- 6 Brush with the honey mixture repeatedly while grilling
- 7 Flip and brush again — repeat until a glaze layer forms
- 8 Grill for a total of 20-25 minutes until cooked through and caramelized
- 9 Serve with rice, sambal, and fresh raw vegetables
💡 Tips
• Real honey makes a tastier glaze than fake/imitation honey
• Brush the chicken repeatedly while grilling so the glaze layer builds up thick
• Boil the chicken first so it cooks evenly — if you grill it straight away, it can end up burnt outside and raw inside
• Keep the heat from getting too high so the honey doesn't burn
