Ayam Betutu, the classic Balinese spiced chicken, with seasoning that soaks all the way to the bone! A whole chicken is rubbed with base genep (the complete Balinese spice paste), wrapped in banana leaves, then slow-cooked. Once a ceremonial dish, now you can enjoy it every day.

- 1 whole free-range chicken
- Banana leaves, for wrapping
- 10 Base genep (Balinese spice paste): shallots
- 6 clove garlic
- 8 curly red chilies
- 5 bird's eye chilies
- 4 candlenuts, toasted
- 3 inch piece turmeric
- 3 inch piece ginger
- 3 inch piece kencur (aromatic ginger)
- 3 inch piece galangal
- 2 tsp coriander seeds
- 1 tsp pepper
- 1 tsp shrimp paste, toasted
- 3 leaves kaffir lime leaves
- 2 stalks lemongrass, sliced
- 2 tbsp coconut oil
- 2 tsp salt
- 1 tsp sugar

👩🍳 Instructions
- 1 Grind all the base genep ingredients into a smooth paste, except for the kaffir lime leaves and lemongrass
- 2 Sauté the spice paste in coconut oil until fragrant and fully cooked
- 3 Add the sliced kaffir lime leaves and lemongrass, and stir to combine
- 4 Rub the whole chicken evenly with the spice paste — make sure to coat the inside of the cavity as well
- 5 Let it rest in the fridge for at least 2 hours so the seasoning can soak in (overnight is best)
- 6 Wrap the chicken tightly in several layers of banana leaves and tie it up
- 7 Steaming method: steam for 2.5–3 hours until the chicken is super tender
- 8 Oven method: bake at 320°F (160°C) for 2.5 hours, wrapped in aluminum foil plus banana leaves
- 9 Unwrap and transfer the chicken to a plate
- 10 Broil or grill briefly for 10 minutes to finish if you'd like the skin browned
- 11 Serve with steamed white rice and sambal matah (raw shallot-lemongrass chili relish)
💡 Tips
• Marinating overnight lets the seasoning soak in perfectly, all the way to the bone
• Base genep is the most complete Balinese spice paste — don't skip any of the ingredients
• Wrap it tightly in banana leaves so the chicken cooks in the steam from its own seasoning
