- 500g boneless chicken thigh, cut into 2cm cubes
- 30 skewers bamboo skewers, soaked in water
- 3 tbsp Marinade: sweet soy sauce (kecap manis)
- 1 tbsp cooking oil
- 1/2 tsp salt
- 200g Peanut sauce: fried peanuts
- 5 curly red chili peppers
- 3 clove garlic
- 3 tbsp sweet soy sauce (kecap manis)
- 2 tbsp grated palm sugar
- 1 tsp salt
- 200 ml warm water
- 1 tbsp lime juice
- To serve: lontong (compressed rice cakes)

👩🍳 Instructions
- 1 Marinate the chicken with sweet soy sauce, oil, and salt for at least 30 minutes.
- 2 Thread the chicken onto skewers, 4-5 pieces per skewer.
- 3 For the peanut sauce: coarsely blend the peanuts, chilies, and garlic.
- 4 Transfer to a saucepan, then add warm water, sweet soy sauce, palm sugar, and salt.
- 5 Cook over low heat, stirring, until thickened.
- 6 Add the lime juice and adjust the seasoning to taste.
- 7 Grill the satay over hot charcoal or on a grill pan.
- 8 Brush with sweet soy sauce while grilling.
- 9 Turn occasionally until cooked through with nice char marks, about 8-10 minutes.
- 10 Serve the satay with peanut sauce and lontong.
- 11 Complete with sliced shallots, tomato, cucumber, and sweet soy sauce.
💡 Tips
• Soak the bamboo skewers in water for at least 30 minutes so they don't burn.
• Charcoal embers give the most authentic satay aroma — a grill pan can be used as an alternative.
• Don't make the peanut sauce too thin — it should cling nicely to the satay.
