- 500g chicken (thighs and breast)
- 1.5 liters water
- 8 Ground spice paste: shallots
- 5 clove garlic
- 4 candlenuts
- 3 inch piece turmeric
- 2 inch piece ginger
- 1 tsp coriander seeds
- 3 Other seasonings: bay leaves
- 2 stalks lemongrass, bruised
- 3 inch piece galangal, bruised
- 2 tsp salt
- 1 tsp sugar
- 50 g Koya: shrimp crackers, fried and crushed
- 3 clove fried garlic, ground fine
- To serve: rice vermicelli, boiled

- 1 Boil the chicken in water until cooked through, then remove
- 2 Shred the chicken and strain the broth
- 3 Sauté the ground spice paste until fragrant and cooked
- 4 Add the bay leaves, lemongrass, and galangal
- 5 Pour in the broth and bring to a boil
- 6 Season with salt and sugar, then adjust to taste
- 7 Make the koya: crush the fried shrimp crackers and fried garlic together, then mix well
- 8 Prepare the bowls: place the vermicelli, cabbage, and bean sprouts at the bottom
- 9 Top with the shredded chicken
- 10 Pour the hot soto broth over the top
- 11 Sprinkle with koya, fried shallots, scallions, and celery leaves
- 12 Add a squeeze of lime juice and some sambal
- 13 Serve with steamed white rice or lontong (compressed rice cakes)
