- 1 whole free-range chicken (ayam kampung), cut into 8-10 pieces
- 8 inch piece galangal, grated
- 6 clove garlic
- 4 shallots
- 3 leaves bay leaves
- 2 stalks lemongrass stalks, bruised
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 500 ml thin coconut milk
- 2 tsp salt
- 1 tsp palm sugar
- Oil for frying

👩🍳 Instructions
- 1 Grind the garlic, shallots, coriander, and turmeric into a smooth paste
- 2 Mix the ground spice paste with the grated galangal
- 3 Put the chicken into a pot and rub it all over with the spice mixture
- 4 Add the bay leaves, lemongrass, coconut milk, salt, and palm sugar
- 5 Cook over medium heat until the coconut milk reduces and the seasoning is fully absorbed, about 30-40 minutes
- 6 Stir occasionally so it doesn't burn
- 7 Once the liquid has dried up, remove the chicken from the pot
- 8 Heat oil and fry the chicken until golden brown and crispy
- 9 Serve with fresh raw vegetables (lalapan) and sambal
💡 Tips
• Simmer the chicken in the seasoning first so the flavors soak in, then fry it
• Don't use too high a heat when frying so it cooks evenly
• Goes great with nasi liwet (Sundanese coconut rice) and sambal terasi (shrimp paste chili sauce)
