  • 500 grams chicken breast fillet
  • 2 whole, juiced lemon
  • 4 cloves, finely minced garlic
  • 5 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika powder (optional)
  • 1 whole, cut into cubes red bell pepper
  • 1 whole, cut into cubes onion
  • 8-10 sticks wooden skewers
  • 200 grams plain yogurt
  • 1/2 whole, grated & juice squeezed out cucumber
  • 1 tbsp, chopped fresh mint leaves (optional)

  1. 1 Cut the chicken breast into 3-4 cm (about 1.5-inch) cubes so they cook evenly when grilled.
  2. 2 Make the marinade: mix the lemon juice, minced garlic, olive oil, oregano, thyme, salt, pepper, and paprika powder in a bowl.
  3. 3 Add the chicken pieces into the marinade and toss well until every surface is coated. Cover and refrigerate for at least 1 hour, or overnight for the best results.
  4. 4 While waiting, make the yogurt sauce (a simple tzatziki): mix the yogurt, grated cucumber (with the juice squeezed out), a bit of minced garlic, and mint leaves. Stir well and keep in the fridge.
