- 500 grams chicken breast fillet
- 2 whole, juiced lemon
- 4 cloves, finely minced garlic
- 5 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp paprika powder (optional)
- 1 whole, cut into cubes red bell pepper
- 1 whole, cut into cubes onion
- 8-10 sticks wooden skewers
- 200 grams plain yogurt
- 1/2 whole, grated & juice squeezed out cucumber
- 1 tbsp, chopped fresh mint leaves (optional)

- 1 Cut the chicken breast into 3-4 cm (about 1.5-inch) cubes so they cook evenly when grilled.
- 2 Make the marinade: mix the lemon juice, minced garlic, olive oil, oregano, thyme, salt, pepper, and paprika powder in a bowl.
- 3 Add the chicken pieces into the marinade and toss well until every surface is coated. Cover and refrigerate for at least 1 hour, or overnight for the best results.
- 4 While waiting, make the yogurt sauce (a simple tzatziki): mix the yogurt, grated cucumber (with the juice squeezed out), a bit of minced garlic, and mint leaves. Stir well and keep in the fridge.
- 5 Soak the wooden skewers in water for 15 minutes so they don't burn easily on the grill.
- 6 Thread the chicken pieces onto the skewers, alternating with the bell pepper and onion.
- 7 Heat a grill pan or non-stick skillet with a little oil, and grill the skewers over medium heat for 4-5 minutes per side until the chicken is cooked through and slightly browned at the edges.
- 8 Remove from heat and serve warm with the cold yogurt sauce and fresh lemon wedges on the side.
