  • Meatballs: 300g boneless, skinless chicken breast
  • 2 clove garlic
  • 1 egg white
  • 2 tbsp tapioca flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sesame oil
  • 1 tbsp ice water
  • Broth: 500ml water
  • 2 clove garlic, smashed
  • 1 stalk scallion
  • 1 stalk carrot, cut into flower shapes
  • 3 leaves bok choy (green mustard greens)
  • 1 tsp salt
  • 1/2 tsp pepper
  • Bamboo skewers

👩‍🍳 Instructions

  1. 1 Meatballs: blend the chicken with garlic until smooth
  2. 2 Transfer to a bowl, add the egg white, tapioca flour, salt, pepper, sesame oil, and ice water
  3. 3 Stir in one direction until the mixture is smooth and springy
  4. 4 Bring water to a boil, then reduce the heat to low
  5. 5 Shape the meatballs using a spoon and drop them into the hot water one at a time
  6. 6 Cook until they float, about 5 minutes
  7. 7 Remove and set aside
  8. 8 Broth: bring fresh water to a boil, briefly sauté the garlic
  9. 9 Add the carrot and cook for 3 minutes
