This classic Sundanese bandrek has a spicy ginger kick that warms you up right away! It's a traditional spiced drink made rich and sweet with palm sugar — a natural remedy for colds and chills.

  • 500ml water
  • 100g grated palm sugar
  • 5cm old/mature ginger, crushed
  • 2 stalks lemongrass stalks, crushed
  • 3 leaves pandan leaves
  • 5cm cinnamon stick
  • 3 cloves
  • 2 cardamom pods
  • 1/4 tsp ground pepper
  • 1 tbsp honey (optional)
  • Sweetened condensed milk (optional)

👩‍🍳 Instructions

  1. 1 Crush the ginger until slightly mashed so its aroma really comes through
  2. 2 Bring the water to a boil together with the ginger, lemongrass, pandan leaves, cinnamon stick, cloves, and cardamom pods
  3. 3 Simmer over low heat for 15 minutes until the water changes color and smells fragrant with spices
  4. 4 Add the palm sugar and stir until dissolved
  5. 5 Add the ground pepper and stir
  6. 6 Strain into a glass
  7. 7 Add honey if you like it sweeter
  8. 8 You can add a little sweetened condensed milk for a creamy version
  9. 9 Serve piping hot

• Mature ginger is spicier and more fragrant — don't use young ginger
