  • 150 grams dried tapioca pearls (sagu mutiara)
  • 1.5 liters water
  • 200 ml instant thick coconut milk
  • 100 grams granulated sugar
  • 2 leaves pandan leaves
  • 1/4 tsp salt
  • 100 ml cocopandan or raspberry (frambos) flavored syrup
  • ice cubes
  • 100 grams nata de coco (optional)

  1. 1 Boil the water until it comes to a boil in a large pot. Add the dried tapioca pearls, stirring gently so they don't clump at the bottom of the pot.
  2. 2 Cook the tapioca pearls, stirring occasionally, for 15-20 minutes until the pearls turn completely translucent, with just a tiny white dot remaining in the center.
  3. 3 Turn off the heat, cover the pot, and let it sit for 10-15 minutes so the pearls cook through completely and the white dot in the center disappears. Afterward, drain and rinse with cold water to stop the cooking process and prevent sticking.
  4. 4 While waiting for the tapioca pearls, make the coconut milk sauce: simmer the instant thick coconut milk together with the pandan leaves, granulated sugar, and salt over low heat, stirring continuously so the coconut milk doesn't separate. Cook until it comes to a boil, then remove from heat and let cool.
  5. 5 Prepare serving glasses. Add the cooked tapioca pearls into the glasses, and add nata de coco if desired.
  6. 6 Pour the pandan coconut milk sauce to taste into the glasses, then add cocopandan or raspberry (frambos) syrup according to your preference.
  7. 7 Add ice cubes to taste, and stir briefly before serving so the sweet, savory, and refreshing flavors mix evenly.

💡 Tips

• Stir the tapioca pearls continuously while boiling so they don't clump together or stick to the bottom of the pot.

• After boiling, immediately rinse the tapioca pearls with cold water or ice water to stop the cooking process and keep the texture chewy rather than mushy.

• For extra convenience, you can make a large batch of the coconut milk sauce and syrup and store it in the refrigerator for up to 2 days, then just pour it when ready to serve.
