Fluffy, snow-like milk shavings paired with fresh strawberry pieces and a drizzle of sweetened condensed milk, delivering a cold sensation that melts in your mouth. This Korean-style dessert is popular as a summer treat because of its unique texture, far softer than regular shaved ice. Perfect for sharing with friends and family, each with their own favorite toppings.

  • 500 ml whole milk
  • 4 tbsp sweetened condensed milk
  • 250 grams fresh strawberries
  • 3 tbsp granulated sugar
  • 500 ml frozen milk ice cubes (milk frozen ahead of time)
  • 3 tbsp shredded cheddar cheese
  • 2 tbsp toasted almond slices
  • 2 scoops vanilla ice cream (optional)
  • 6 pieces mini mochi (optional)

👩‍🍳 Instructions

  1. 1 The day before, pour the milk into a container or ice cube tray, then freeze overnight until completely solid.
  2. 2 Wash the strawberries thoroughly and cut into small cubes. Set aside a few for garnish, then mix the rest with the granulated sugar, stir well, and let sit for 10 minutes until the juices are released.
  3. 3 Place the frozen milk cubes into a shaved ice machine (bingsu maker) or a special shaved-ice blender, and process until the ice turns into fine, snow-like shavings.
  4. 4 Pour the shaved milk ice into a deep serving bowl, shaping it neatly into a mound.
  5. 5 Drizzle sweetened condensed milk over the top to taste, letting it soak into the gaps of the shaved ice.
  6. 6 Sprinkle with the sugared strawberries, shredded cheddar cheese, and toasted almond slices.
  7. 7 Add a scoop of vanilla ice cream and mini mochi on top if desired, for an extra indulgent touch.
  8. 8 Serve immediately while cold and soft in texture, before the ice starts to melt.

💡 Tips

• Use frozen milk instead of water so the shavings turn out softer and creamier, just like authentic bingsu.

• Make sure the frozen milk cubes are completely solid for at least 8 hours so they shave into fine, smooth flakes.

• Don't prepare it too far in advance — bingsu tastes best enjoyed right after it's made, since the texture melts quickly.

• Feel free to vary the toppings to your taste, such as matcha powder, sweet red beans, or diced mango.
