- 250g kadayif/shredded pastry (you can use shredded phyllo)
- 200g mozzarella cheese, shredded or thinly sliced
- 100g melted butter
- 150g Syrup: granulated sugar
- 100ml water
- 1 tbsp lemon juice
- 1 tsp rose water (optional)
- Topping: chopped pistachios
- A little ground cinnamon

👩🍳 Instructions
- 1 Syrup: boil sugar and water until dissolved, add lemon juice, cook for 5 minutes, then let cool
- 2 If the kadayif strands are long, cut them into short pieces about 2-3cm long
- 3 Mix the kadayif with melted butter until evenly coated
- 4 Take half of the kadayif and press it firmly into the bottom of a nonstick skillet or 20cm nonstick baking pan
- 5 Arrange the mozzarella cheese evenly on top
- 6 Cover with the remaining kadayif, pressing it down firmly
- 7 Skillet method: cook over low heat for 8-10 minutes until the bottom is golden, flip using a plate, then cook the other side for 8 minutes
- 8 Oven method: bake at 180°C (350°F) for 20-25 minutes until golden
- 9 Flip onto a serving plate
- 10 Pour cold syrup over the top to taste
- 11 Sprinkle with chopped pistachios and a little cinnamon
- 12 Cut and serve while hot — the cheese should be stretchy!
💡 Tips
• The cheese must be stretchy mozzarella — don't use cheddar
• Pour cold syrup over hot kunefe — same rule as with baklava
• Eat right away while it's hot so the cheese is still stretchy and melted
