Dorayaki — a Japanese pancake filled with red bean paste that's Doraemon's favorite snack! Two soft, fluffy pancakes sandwich a sweet, rich anko (red bean paste) filling. This iconic Japanese dessert turns out to be super simple to make.

  • Pancake: 2 eggs
  • 80g granulated sugar
  • 1 tbsp honey
  • 120g all-purpose flour
  • 1/2 tsp baking powder
  • 2 tbsp water
  • 1 tbsp mirin (optional)
  • A little oil for cooking
  • Anko filling: 200g dried red beans (azuki beans)
  • 150g granulated sugar
  • 1/4 tsp salt
  • 200ml water

👩‍🍳 Instructions

  1. 1 Anko (you can use instant red bean paste if you want to save time): soak the red beans overnight
  2. 2 Boil until soft, about 1 hour, then drain
  3. 3 Cook the red beans with sugar, salt, and water over low heat
  4. 4 Keep stirring until the paste thickens and dries out — about 20 minutes
  5. 5 Mash part of it with a spatula, but leave some beans whole for texture
  6. 6 Let it cool
  7. 7 Pancake: beat the eggs and sugar until pale and thick
  8. 8 Add the honey and mirin
  9. 9 Sift in the flour and baking powder, then fold in gently
  10. 10 Add the water and stir until smooth
  11. 11 Let the batter rest for 15 minutes
  12. 12 Heat a nonstick pan over low heat, lightly grease with oil, then wipe off the excess
  13. 13 Pour in 2 tbsp of batter and let it naturally spread into a circle
  14. 14 Cook until bubbles appear on the surface, then flip and cook for 1 minute
  15. 15 Repeat to make all the pancakes
  16. 16 Take one pancake, add 1-2 tbsp of anko, then top with another pancake
  17. 17 Gently press the edges together

💡 Tips

• The heat must be really low and even so the pancakes brown perfectly and evenly

• Wipe off the oil after greasing the pan — too much oil will make the pancakes look blotchy

• Dorayaki tastes best when eaten fresh on the same day
