👩🍳 Instructions
- 1 Cook the water, sugar, salt, and oil together until boiling
- 2 Turn off the heat, add the flour all at once, and stir quickly until the dough comes together smoothly and isn't sticky
- 3 Transfer the dough into a piping bag fitted with a star tip
- 4 Heat frying oil in a pan over medium heat
- 5 Pipe 4-5 inch (10-12 cm) lengths of dough directly into the hot oil, snipping the ends off with scissors
- 6 Fry until golden brown, flipping occasionally — about 3-4 minutes
- 7 Remove, drain, and roll in the cinnamon sugar mixture while still warm
- 8 For the sauce: heat the cream, pour it over the dark chocolate, stir until melted, then add the butter
- 9 Serve the warm churros with the chocolate sauce for dipping
💡 Tips
• The oil needs to be hot enough (350°F/180°C) so the churros turn out crispy and don't soak up too much oil
• Use a star tip so the churros have a textured surface and extra crispiness
• Roll the churros in sugar while they're still warm so it sticks well
• If the dough is too runny, the churros will turn out soft and limp; if it's too thick, it'll be hard to pipe
