👩🍳 Instructions
- 1 Soak the dates in warm water for 10 minutes to soften them and make them easier to blend, then drain.
- 2 Toast the oats in a dry skillet over low heat for 3-4 minutes, stirring constantly, until fragrant and lightly browned. Remove from heat and let cool.
- 3 Add the soaked dates, toasted oats, almonds, coconut oil, cinnamon, and salt into a food processor or dry blender.
- 4 Process for 1-2 minutes until all the ingredients are evenly combined and form a sticky mixture resembling a coarse paste. If it's too dry, add warm water 1 tsp at a time until the mixture can be shaped by hand.
- 5 Scoop about 1 heaping tbsp of the mixture and roll it into a ball using hands slightly dampened with water to prevent sticking, forming firm balls about 1.2 inches (3 cm) in diameter.
- 6 Roll each ball in the dried shredded coconut until evenly coated on the surface.
- 7 Store the bites in an airtight container and chill in the refrigerator for at least 30 minutes before serving so the texture becomes firmer and chewier.
💡 Tips
• Choose soft, sticky Medjool dates so the mixture binds easily without needing much added water.
• Store in the freezer for a chewier texture that keeps for up to 1 month.
• Swap the almonds for cashews or walnuts for a different flavor variation.
• Dampen your hands with a little water while shaping the balls so the mixture doesn't stick to your hands.
