- 150 g Korean glass noodles (dangmyeon)
- 100 g fresh spinach
- 1 carrot, julienned
- 1 red bell pepper, julienned
- 100 g shiitake mushrooms, sliced
- 1/2 onion, thinly sliced
- 50 g boiled shredded chicken breast (optional)
- 2 clove garlic, minced
- 1 tbsp sesame oil
- Toasted sesame seeds
- 3 tbsp Dressing: soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp gochugaru (Korean chili flakes) or chili powder
- 1 clove garlic, grated

👩🍳 Instructions
- 1 Boil the glass noodles according to the package instructions, drain, and rinse with cold water
- 2 Cut the noodles with scissors so they're not too long
- 3 Blanch the spinach for 30 seconds, drain, and squeeze out excess water
- 4 Stir-fry the carrot and bell pepper briefly for 1 minute, remove while still crisp
- 5 Stir-fry the mushrooms and onion until softened
- 6 Combine all the dressing ingredients in a jar and shake well
- 7 Put the glass noodles, spinach, carrot, bell pepper, mushrooms, and onion into a large bowl
- 8 Add the shredded chicken, if using
- 9 Pour in the dressing and toss well
- 10 Sprinkle with toasted sesame seeds
- 11 Can be served warm or cold — both are delicious
💡 Tips
• Korean glass noodles (dangmyeon) are different from regular glass noodles — they're chewier and springier
• Rinse the noodles with cold water after cooking so they don't stick together
• This salad tastes even better after resting for 30 minutes, letting the dressing soak in
