- 250 grams ground beef
- 500 ml beef broth
- 75 grams butter
- 75 grams all-purpose flour
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/4 tsp ground nutmeg
- 1/2 tsp ground black pepper
- 1 tsp salt
- 1 tbsp chopped parsley (optional)
- 2 eggs, beaten
- 200 grams panko/breadcrumbs
- 100 grams all-purpose flour for coating

- 1 Sauté the chopped onion and garlic with a little butter until fragrant and softened, then set aside.
- 2 Boil the ground beef in the beef broth until cooked through and tender, about 10-15 minutes. Remove the beef, chop it finely, and reserve the broth.
- 3 Melt 75 grams of butter in a saucepan, then add the flour little by little while stirring quickly to form a thick, lump-free roux.
- 4 Pour in the hot broth gradually into the roux while continuously stirring so it doesn't clump, then cook over low heat until it thickens to a thick porridge-like consistency.
- 5 Add the chopped beef, sautéed onion and garlic, ground nutmeg, pepper, salt, and parsley. Mix well and cook briefly until the mixture is very thick and can be shaped.
- 6 Pour the ragout mixture into a flat container, spread it out evenly, cover with plastic wrap pressed directly onto the surface to prevent a crust from forming, then chill in the refrigerator for at least 3-4 hours or overnight until completely firm.
- 7 Once firm, scoop about 1-2 tbsp of the mixture and roll it into a ball using hands lightly moistened with oil or water to prevent sticking.
- 8 Roll the ragout ball in flour, then dip it into the beaten egg, then roll it in the breadcrumbs until evenly coated. Repeat the egg and breadcrumb dipping process once more for a crispier double coating.
- 9 Store the coated balls in the refrigerator for 30 minutes to let the coating set perfectly before frying.
- 10 Heat plenty of oil over medium heat, then fry the bitterballen until golden and crispy, about 3-4 minutes, without flipping them too often so the coating doesn't break.
