A classic Bandung stuffed tofu that's sliced open, packed with vegetables and spicy seasoning, then fried until crunchy! The skin is crispy and golden on the outside, while the inside is soft with a filling that packs a spicy punch. Gehu is most famous in the Setiabudi and Pasteur areas — but making it at home is easy too, and the results are just as delicious!

  • 10 pieces square white tofu (medium size)
  • Filling: 1 carrot, grated
  • 100g cabbage, thinly sliced
  • 3 stalks scallions, sliced
  • 5 chilies bird's eye chilies, thinly sliced
  • 3 clove garlic, finely minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 tbsp Batter: all-purpose flour
  • 2 tbsp rice flour
  • 100ml water
  • 1/4 tsp salt
  • 1/4 tsp turmeric powder
  • Oil for frying
  • Whole bird's eye chilies for extra spice (optional)

👩‍🍳 Instructions

  1. 1 Slice the tofu diagonally from corner to corner, but don't cut all the way through — create a pocket
  2. 2 Scoop out a little of the tofu with a small spoon to make room for the filling
  3. 3 Mix all the filling ingredients together — carrot, cabbage, scallions, bird's eye chilies, garlic, salt, and pepper
  4. 4 Stuff the tofu with the vegetable mixture, pressing down to pack it in firmly
  5. 5 For extra heat, tuck 1-2 whole bird's eye chilies inside
  6. 6 Mix the batter ingredients — flour, rice flour, water, salt, and turmeric
  7. 7 Dip the stuffed tofu into the batter
  8. 8 Fry in hot oil (340°F/170°C) until golden brown and crispy — about 3-4 minutes
  9. 9 Drain on a wire rack
  10. 10 Serve hot with bird's eye chilies and sweet soy sauce (kecap manis)

💡 Tips

• Slice the tofu carefully — don't cut all the way through, so the filling doesn't spill out during frying

• Make sure to drain the tofu well first so the batter sticks properly

• Pack the filling firmly so it doesn't fall out while frying

• Fry in plenty of hot oil so it crisps up right away — use medium heat so the inside cooks through too
