- 150 grams ground chicken
- 1 handful fresh spinach, finely chopped

- 2 tbsp onion, finely chopped
- 3 tbsp panko breadcrumbs
- 1 tsp low-sodium soy sauce
- 1/2 tsp sesame oil
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1 tbsp vegetable oil for brushing

- 1 Heat a little oil in a pan, and sauté the garlic and onion until fragrant and softened.
- 2 Add the ground chicken, stirring until it changes color and is cooked through evenly. Set aside to cool slightly.
- 3 In a large bowl, combine the warm rice, sautéed chicken, chopped spinach, grated carrot, and cheddar cheese.
- 4 Add the egg, breadcrumbs, soy sauce, sesame oil, salt, and pepper. Mix well by hand or with a spatula until all the ingredients are combined.
- 5 Preheat the oven to 350°F (180°C) for 10 minutes. Prepare a baking sheet and line it with parchment paper.
- 6 Take a portion of the rice mixture and shape it into balls about the size of a ping pong ball, using hands lightly dampened with water so the mixture doesn't stick.
