Nasi goreng (Indonesian fried rice) shaped into balls, stuffed with mozzarella cheese in the center, coated in breadcrumbs and fried until crispy! When you bite in, the cheese melts out — kids will absolutely love it. This is a creative way to use up leftover fried rice that's gotten boring to eat plain.

- 300g leftover fried rice (or make a fresh batch)
- 100g mozzarella cheese, cut into 1cm cubes
- 1 egg (mixed into the rice)
- 3 tbsp Coating: all-purpose flour
- 2 eggs, beaten
- 100g breadcrumbs
- Oil for frying
- Sauce: ketchup or chili sauce packets

👩🍳 Instructions
- 1 Mix the fried rice with 1 egg, stirring well so it can hold its shape
- 2 Take 2 tbsp of fried rice and flatten it in the palm of your hand
- 3 Place 1 mozzarella cube in the center
- 4 Cover with more rice, then shape into a ball and pack it tightly
- 5 Repeat until all the rice is used — you should get about 8-10 balls
- 6 Coat each ball in all-purpose flour
- 7 Dip into the beaten eggs
- 8 Roll in breadcrumbs, pressing gently so they stick
- 9 Deep-fry in plenty of oil (170°C/340°F) until golden brown, about 3-4 minutes
- 10 Drain on a wire rack
- 11 Let cool slightly, then arrange in a lunch box
💡 Tips
• The fried rice should be cold and a bit dry so it holds together as a ball
• Press the balls firmly so they don't fall apart while frying
• The melted mozzarella tastes best when eaten while still a bit warm
• You can freeze them before frying — they'll keep for 2 weeks in the freezer
