- 1 medium cauliflower
- 2 eggs
- 100g peeled shrimp or diced chicken breast
- 3 cloves garlic, minced
- 4 shallots, sliced
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp olive oil
- 1 small carrot, diced small
- 50g green peas
- 2 stalks green onions, sliced
- Salt and pepper to taste

👩🍳 Instructions
- 1 Chop the cauliflower, then blend or grate it coarsely until the texture resembles rice grains
- 2 Heat 1 tbsp of oil, sauté the garlic and shallots until fragrant
- 3 Add the protein (shrimp or chicken), cook until done, then set aside
- 4 Add the remaining oil, then add the carrot and green peas, and sauté for 2 minutes
- 5 Add the riced cauliflower
- 6 Cook over high heat, stirring, for 3-4 minutes
- 7 Push everything to the side of the pan, add the eggs, and scramble
- 8 Mix everything together, then add the protein back in
- 9 Season with soy sauce, oyster sauce, sesame oil, salt, and pepper
- 10 Sprinkle with green onions and serve
💡 Tips
• Don't blend the cauliflower too finely — it should resemble grains of rice
• Cook over high heat and don't overcook it, so it doesn't turn mushy
• Add 1 tsp of sweet soy sauce (kecap manis) if you're craving the taste of real fried rice
