  • 2 pieces (150 g each) Skinless chicken breast fillet
  • 150 g Fresh asparagus
  • 2 whole, juiced with a little zest taken Lime
  • 3 cloves, finely minced Garlic
  • 1 tbsp Olive oil
  • 1 tsp Honey
  • 1 tbsp Low-sodium soy sauce
  • 1/2 tsp Paprika powder (optional)
  • 1/4 tsp Salt
  • 1/4 tsp Ground black pepper
  • to taste for garnish Parsley or green onion leaves

👩‍🍳 Instructions

  1. 1 Make the marinade: combine the lime juice, lime zest, minced garlic, olive oil, honey, low-sodium soy sauce, paprika powder, salt, and black pepper in a bowl. Stir well.
  2. 2 Coat the chicken breasts evenly with the marinade mixture. Let sit for at least 20 minutes in the fridge so the flavors soak in (if you have time, marinating overnight gives even better results).
  3. 3 Preheat the oven to 200°C (400°F) for 10 minutes. Meanwhile, wash the asparagus thoroughly and trim off the tough ends.
  4. 4 Arrange the marinated chicken on a baking sheet lined with parchment paper. Set aside the remaining marinade to drizzle on later.
  5. 5 Roast the chicken for 15 minutes, then take it out briefly, drizzle the remaining marinade over the chicken, and arrange the asparagus alongside it. Drizzle a little olive oil over the asparagus.
  6. 6 Return to the oven and roast for another 10-12 minutes until the chicken is fully cooked and the asparagus is tender-crisp (avoid overcooking so it keeps a nice crunchy texture).
  7. 7 Remove from the oven and sprinkle with parsley or sliced green onions. Serve warm, sliced as desired.

💡 Tips

• The longer you marinate, the more the flavor soaks into the chicken - if you have time, marinate it the night before.

• Avoid using chicken breasts that are too thick without slicing them open, since the center may not cook through properly when roasted.

• If you don't have an oven, you can pan-sear it in a non-stick skillet over medium heat, basting occasionally with the sauce.

• Swap the asparagus for broccoli or green beans if it's hard to find - still delicious and nutritious.
