👩🍳 Instructions
- 1 Whisk the eggs and granulated sugar together until the sugar dissolves and the batter turns slightly pale and fluffy, about 2-3 minutes.
- 2 Add the honey to the whisked eggs and stir until well combined.
- 3 Sift the flour and baking powder, then gradually add them into the egg mixture, gently folding with a spatula so no lumps form.
- 4 Pour in the water little by little while continuing to stir until the batter becomes smooth and thick like pancake batter. Let the batter rest for 15-20 minutes so the gluten relaxes and the pancakes turn out softer.
- 5 Heat a nonstick flat pan over low heat, and lightly grease it with oil using a paper towel or brush.
- 6 Pour 1 ladle of batter onto the pan, shaping it into a round about 8-10 cm (3-4 inches) in diameter.
- 7 Cook until small bubbles appear on the surface and the edges start to look dry, then flip and cook the other side for about 30-45 seconds until fully cooked and evenly browned.
- 8 Remove from the pan and cover with a clean cloth to keep them moist and prevent drying out. Repeat until all the batter is used, setting the pancakes aside in matching pairs by size.
- 9 Take one dorayaki pancake, spread red bean paste to taste in the center, then cover with another pancake to form a sandwich.
- 10 Serve the dorayaki at room temperature, or store in an airtight container to keep them soft.
💡 Tips
• Make sure to keep the stove on low heat while cooking so the inside cooks through fully without burning the surface.
• Let the batter rest before cooking so the dorayaki turns out softer and rises nicely.
• The red bean paste can be swapped for chocolate spread, custard, or strawberry jam for a flavor variation, depending on your preference.
• Store the dorayaki in a covered container at room temperature for up to 2 days, or in the refrigerator for up to 5 days, then warm briefly before serving.
