- Cake: 130g dark chocolate 70%, melted
- 130g butter, room temperature
- 130g powdered sugar, divided in half
- 6 eggs, separated
- 130g all-purpose flour, sifted
- 1/4 tsp salt
- 1 tsp vanilla
- Filling: 200g apricot jam, blended smooth and strained
- Glaze: 200g dark chocolate 70%
- 150ml heavy cream
- 2 tbsp glucose syrup
- Whipped cream, for serving

👩🍳 Instructions
- 1 Beat the butter with half of the sugar until pale and fluffy
- 2 Add the melted chocolate and stir to combine
- 3 Add the egg yolks one at a time, beating continuously
- 4 Whip the egg whites with the salt and remaining sugar until stiff peaks form
- 5 Fold the flour into the chocolate batter, alternating with the egg whites, using a gentle folding technique
- 6 Bake in a 22cm (8.5-inch) pan lined with parchment paper at 340°F (170°C) for 45-50 minutes
- 7 Let cool completely, then slice horizontally into 2 layers
- 8 Spread the middle layer and the entire outer surface with warm apricot jam
- 9 Glaze: heat the cream, pour over the chopped chocolate and glucose syrup, and stir until smooth and glossy — a mirror-glaze ganache
- 10 Pour the glaze evenly over the entire surface of the cake, letting it flow naturally
- 11 Let set at room temperature
- 12 Serve with whipped cream on the side
💡 Tips
• The ganache glaze should be poured at around 95°F (35°C) — too hot and it will be too runny, too cold and it won't flow properly
• The apricot jam MUST be spread over the entire surface before glazing so the glaze sticks perfectly
• Sachertorte is a cake of patience — each stage must be fully completed before moving on to the next
