👩🍳 Instructions
- 1 Soak the dates in warm water for 10 minutes to soften them and make them easier to blend, especially if the dates are a bit firm. Once softened, drain well.
- 2 Put the dates and almonds into a food processor or dry blender. Process until they form a coarse, crumbly texture—don't let it get too smooth like a paste.
- 3 Add the instant oats, peanut butter, cocoa powder, honey, and salt to the mixture. Process again until everything is evenly combined and forms a dough that holds together when pressed with your hands.
- 4 Check the dough's consistency by taking a small amount and pressing it in your palm. If it's still too dry and crumbly, add warm water 1 tablespoon at a time until the dough is easy to shape.
- 5 Take about 1 tablespoon of the dough and roll it between your palms into small balls about the size of a mini ping-pong ball. Lightly dampen your hands with water if the dough feels sticky.
- 6 Roll each energy ball over the desiccated coconut until it's evenly coated on all sides.
- 7 Arrange the energy balls in an airtight container lined with parchment paper, then refrigerate for at least 30 minutes so they firm up and set before serving.
💡 Tips
• Use Medjool or Deglet Noor dates, which are soft and naturally sweet, so you won't need to add any extra sugar.
• Store the energy balls in the refrigerator in a covered container for up to 1-2 weeks, or in the freezer for up to 1 month for a long-lasting snack stash.
• If you'd like to switch up the flavor, replace the shredded coconut with a coating of sesame seeds, chopped nuts, or extra cocoa powder.
• Make sure your hands are slightly damp when shaping the balls so the dough doesn't stick and is easier to roll neatly.
