- 250 grams rolled oats (instant or coarse oatmeal)
- 150 grams pitted dates, finely chopped
- 3 tbsp white sesame seeds
- 1 tbsp black sesame seeds
- 80 grams roughly chopped almonds
- 5 tbsp liquid coconut oil (or neutral vegetable oil)
- 4 tbsp honey
- 3 tbsp warm water
- 1/2 tsp ground cinnamon
- 1/4 tsp fine salt
- 1/2 tsp vanilla extract (optional)

- 1 Preheat the oven to 300°F (150°C) for 10 minutes. Prepare a flat baking sheet and line it with parchment paper.
- 2 Mix the chopped dates with 3 tbsp warm water, stirring until the dates soften slightly and form a rough paste. Set aside.
- 3 In a large bowl, combine the oats, white sesame seeds, black sesame seeds, and chopped almonds. Mix well.
- 4 Add the coconut oil, honey, ground cinnamon, salt, and vanilla extract to the oat mixture. Stir until all the dry ingredients are evenly coated with the liquid.
- 5 Add the date paste to the oat mixture, stirring well while pressing it gently with your hands or a wooden spoon so the oats stick together and form small clumps.
- 6 Pour and spread the granola mixture onto the baking sheet, pressing it down slightly with the back of a spoon so it forms crunchy clusters once baked.
- 7 Bake for 25-30 minutes. At the 15-minute mark, remove the sheet and gently stir from the edges toward the center so it bakes evenly, then flatten it out again and continue baking.
- 8 Remove the granola once the edges are golden brown (the center may still look a bit soft — don't worry, it will firm up as it cools). Let the granola cool completely on the baking sheet without touching it, for at least 30 minutes.
- 9 Once completely cool, break the granola into clusters to your liking. Store in an airtight container.

• Don't stir the granola too often while baking if you want big, chunky clumps — just stir it once, halfway through baking.
• Make sure the granola is completely cool before storing it in a jar; if it's still warm, the trapped steam can make the granola soft and lose its crunch.
• You can substitute the dates with raisins or use softer, sweeter medjool dates for an even richer result.
