👩🍳 Instructions
- 1 Prepare a small square baking pan, about 18x18 cm (7x7 inches), and line it neatly with parchment paper so the sides are fully covered for easy lifting later.
- 2 Dissolve the matcha powder with 1 tbsp of cooled boiled water, stirring until there are no lumps, then set aside.
- 3 Prepare a small pot with water and heat it over low heat for the double boiler technique.
- 4 Put the chopped white chocolate, condensed milk, and butter into a heatproof bowl, then set it over the pot to melt, stirring continuously until melted and well combined, about 5-7 minutes.
- 5 Remove from the pot, then add the matcha mixture, vanilla paste, and salt. Stir quickly and evenly until the green color is perfectly uniform with no streaks.
- 6 Pour the mixture into the prepared pan, smoothing the surface with a spatula or the back of a spoon.
- 7 Gently tap the pan on the table a few times to release any air bubbles.
- 8 Let it cool at room temperature for a bit, then refrigerate for at least 3-4 hours or until completely set and firm.
- 9 Lift the fudge out of the pan using the parchment paper, then cut into cubes as desired with a sharp knife, wiping it clean between each cut.
- 10 Store in an airtight container in the refrigerator, and serve chilled or at room temperature.
💡 Tips
• Use white chocolate that contains real cocoa butter for a softer fudge that's less likely to crack.
• Choose a good-grade matcha powder so the color turns out a naturally bright green and the flavor isn't overly bitter.
• If the mixture looks a bit grainy while double-boiling, remove it from the heat and whisk quickly off the pot — don't let it stay over direct heat too long.
• Cut the fudge while it's still slightly cold from the fridge for neater slices that won't stick to the knife.
