Fresh and filling Jakarta-style gado-gado! Fresh boiled vegetables, lontong (compressed rice cakes), tofu, tempeh, and eggs are drizzled with a rich, flavorful peanut sauce. It's different from lotek because it uses lontong and has a more complete portion.

- 100g cabbage, sliced
- 100g bean sprouts
- 100g long beans, cut into 3cm pieces
- 100g water spinach (kangkung), cut
- 2 potatoes, boiled and cut
- 2 white tofu, fried
- 2 pieces tempeh, fried
- 2 boiled eggs
- 1 cucumber, sliced
- Lontong (compressed rice cakes), to taste
- Emping crackers
- 200g Peanut sauce: fried peanuts
- 5 red chilies
- 3 cloves garlic
- 2 tbsp palm sugar
- 1 tbsp tamarind water
- 1 tsp salt
- 1 tsp toasted shrimp paste (terasi)
- 250ml warm water

👩🍳 Instructions
- 1 Boil the vegetables separately: water spinach, cabbage, bean sprouts, long beans — don't overcook them
- 2 Boil the potatoes until tender, then slice
- 3 Fry the tofu and tempeh
- 4 For the peanut sauce: blend the peanuts, chilies, garlic, and shrimp paste until smooth
- 5 Transfer to a bowl, add the palm sugar, tamarind water, and salt
- 6 Pour in the warm water little by little while stirring until you reach the right consistency
- 7 Taste and adjust — it should be savory, sweet, spicy, and slightly tangy
- 8 Arrange on a plate: sliced lontong at the bottom
- 9 Arrange all the vegetables, potatoes, tofu, tempeh, egg, and cucumber on top
- 10 Drizzle with the peanut sauce
- 11 Sprinkle with emping crackers
- 12 Serve immediately
💡 Tips
• Boil each vegetable SEPARATELY and don't overcook them so the color and texture stay nice
• Gado-gado's peanut sauce uses shrimp paste (terasi) — this is what sets it apart from lotek
• Add the emping crackers last so they stay crispy
