- Warm steamed white rice
- 100g kangkung (water spinach), boiled
- 100g bean sprouts, blanched
- 100g long beans, boiled and cut
- 100g spinach, boiled
- 100g cabbage, boiled
- For serving: peanut rempeyek (crispy peanut crackers)

- 200g Peanut sambal (pecel sauce): fried peanuts
- 5 pieces curly red chilies
- 3 pieces bird's eye chilies
- 3 cloves garlic
- 2 cm kencur (aromatic ginger)
- 3 leaves kaffir lime leaves
- 2 tbsp palm sugar
- 1 tbsp tamarind pulp
- 1 tsp salt
- 100ml hot water

👩🍳 Instructions
- 1 Peanut sambal: fry the peanuts, chilies, garlic, and kaffir lime leaves
- 2 Grind everything together with the kencur, palm sugar, tamarind, and salt using a mortar and pestle
- 3 Pour in the hot water little by little while grinding until you reach the right consistency
- 4 The peanut sambal should be thick enough to cling to the vegetables, yet still slightly pourable
- 5 Boil each vegetable separately — kangkung, spinach, bean sprouts, long beans, and cabbage
- 6 Don't overcook them; the vegetables should still be green and crisp
- 7 Arrange the white rice on a plate
- 8 Layer the boiled vegetables on top of the rice
- 9 Drizzle with the peanut sambal
- 10 Add the peanut rempeyek, fried tempeh, and boiled eggs
- 11 Serve immediately while still warm
💡 Tips
• Kencur and kaffir lime leaves are the key to Madiun-style peanut sambal, setting it apart from an ordinary peanut sauce
• You can make a big batch of the peanut sambal and store it dry — just dissolve it in hot water whenever you're ready to eat
• Peanut rempeyek (crispy peanut crackers) are a MUST — their crunch makes nasi pecel absolutely perfect
