- 100g cabbage, roughly sliced
- 100g water spinach (kangkung), cut into pieces
- 100g bean sprouts
- 100g long beans, cut into 3cm pieces
- 2 pieces white tofu, fried and diced
- 1 piece cucumber, sliced
- 100g Lotek sauce: fried peanuts
- 3 pieces curly red chilies
- 3 clove garlic
- 1 tbsp palm sugar
- 1 tsp salt
- 2 tbsp tamarind water
- 1 leaf kaffir lime leaf
- 50ml drinking water
- Crackers (kerupuk) for serving

👩🍳 Instructions
- 1 Boil the water spinach, cabbage, bean sprouts, and long beans separately, not too long so they stay crisp
- 2 Drain all the vegetables and set aside
- 3 Grind the peanuts, chilies, garlic, and kaffir lime leaf until smooth but still slightly coarse
- 4 Add the palm sugar, salt, and tamarind water
- 5 Pour in the water little by little while grinding until you reach the right consistency
- 6 Arrange the boiled vegetables, fried tofu, and cucumber on a plate
- 7 Drizzle with the lotek peanut sauce
- 8 Serve with crackers (kerupuk)
💡 Tips
• Don't boil the vegetables for too long so they stay green and crisp
• The lotek sauce tastes better when ground with a mortar and pestle rather than blended
• Add bird's eye chilies if you like it spicier
