  • 1/4 tsp fine salt

  1. 1 Heat the whole milk and half of the sugar in a saucepan over low heat, stirring gently until warm and the sugar dissolves; do not let it come to a boil.
  2. 2 In a separate bowl, whisk the egg yolks, remaining sugar, salt, and cornstarch until pale and slightly thickened.
  3. 3 Gradually pour the hot milk into the egg yolk mixture a little at a time, whisking constantly so the eggs don't curdle (this is the tempering process).
  4. 4 Pour the entire mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon, about 8-10 minutes.
