👩🍳 Instructions
- 1 Soak the glass noodles in warm water for 10-15 minutes until softened, then briefly boil for 2-3 minutes until translucent and chewy. Drain, rinse with cold water, snip a bit with scissors so they aren't too long, and set aside.
- 2 Marinate the sliced beef with 1 tbsp soy sauce, a little ground pepper, and 1/2 tbsp sesame oil for 10 minutes.
- 3 Blanch the spinach for 30 seconds in boiling water, remove, squeeze out the water, cut into pieces, season with a little salt and sesame oil, and set aside.
- 4 Heat a little vegetable oil in a pan, sauté the garlic until fragrant, add the beef, and cook until done. Remove and set aside.
- 5 In the same pan, add more oil, sauté the onion and carrot until slightly wilted, add the wood ear mushrooms and bell pepper, and stir-fry briefly. Remove and set aside.
- 6 Heat a large pan, add the boiled glass noodles, pour in the soy sauce, sugar, and the remaining sesame oil. Stir well while cooking over medium heat for 2-3 minutes so the seasoning is absorbed.
- 7 Return the beef, stir-fried vegetables, spinach, and scallions to the noodles. Stir everything together until fully combined.
- 8 Taste and add salt or soy sauce if it needs more seasoning. Turn off the heat, sprinkle with toasted sesame seeds before serving.
💡 Tips
• Don't boil the glass noodles for too long, as their texture will become mushy and lose their chewiness.
• Stir-fry each vegetable separately so their color and texture stay vibrant and don't become overly wilted.
• Snip the glass noodles with scissors after boiling so they're easier to eat and not too long when served.
• Japchae tastes great served warm or at room temperature, making it a great option for packed lunches since it's still delicious even when cold.
