  • Marinade: 1 Asian pear, grated (or apple)
  • 4 tbsp Korean soy sauce (ganjang) or regular soy sauce
  • 2 tbsp granulated sugar
  • 2 tbsp sesame oil
  • 1 tbsp sake or cooking wine
  • 4 clove garlic, grated
  • 1/2 inch piece ginger, grated
  • 1 stalk green onion, sliced
  • Black pepper
  • For serving: lettuce leaves, chili paste (gochujang), grilled garlic, kimchi

  1. 1 Slice the beef as thinly as possible — it's easier to slice when the meat is half-frozen
  2. 2 Blend or grate all the marinade ingredients
  3. 3 Mix the beef with the marinade, stirring until every surface is coated
  4. 4 Marinate for at least 30 minutes, or best overnight (4 hours) in the fridge
  5. 5 Heat a grill pan or cast-iron skillet over high heat
