- 1 Beat the butter and margarine with a mixer on medium speed for about 1-2 minutes until smooth and pale, being careful not to overwhip.
- 2 Add the egg yolks one at a time, continuing to beat slowly until fully combined.
- 3 Add the grated cheddar cheese and mix briefly on low speed until evenly incorporated.
- 4 Sift together the flour, powdered milk, and salt, then add to the batter little by little. Mix with a spatula or your hands until the dough is smooth and can be shaped, but don't knead for too long so the cookies stay crispy.
- 5 Wrap the dough in plastic wrap and chill in the refrigerator for 20-30 minutes so it's easier to shape and won't spread while baking.
- 6 Preheat the oven to 300°F (150°C) for 10 minutes before use.
