- 500 grams good-quality unsalted butter (Wisman/Orchid brand)
- 250 grams margarine
- 300 grams powdered sugar
- 3 tbsp sweetened condensed milk (white)
- 20 egg yolks
- 4 egg whites
- 200 grams low-protein all-purpose flour
- 2 tbsp full-cream milk powder
- 2 tsp spekuk spice mix (ground cinnamon, cloves, nutmeg, cardamom)
- 200 grams pitted prunes, finely chopped
- 3 tbsp non-alcoholic rum or lime juice, for soaking the prunes
- 1/2 tsp vanilla powder
- 1/4 tsp fine salt

- 1 Soak the chopped prunes in non-alcoholic rum or lime juice for at least 1 hour so the aroma comes through and the texture softens slightly. Set aside.
- 2 Sift together the flour, milk powder, and spekuk spice mix. Set aside.
- 3 Beat the butter, margarine, and powdered sugar with a mixer on medium speed until pale and fluffy, about 8-10 minutes. Add the condensed milk and beat until well combined.
- 4 In a separate bowl, beat the egg yolks and egg whites with the salt until they expand in volume and turn a pale yellow color, about 10 minutes.
- 5 Add the egg mixture into the butter mixture little by little, gently folding with a spatula (do not use the mixer, so the batter doesn't deflate).
- 6 Add the spiced flour mixture little by little, folding until well combined. Finally, fold in the chopped prunes until evenly distributed.
- 7 Preheat the oven using the top heating element only (if your oven has separate settings) to 350°F (180°C). Prepare a 20x20 cm (8x8 inch) square baking pan, lightly grease with margarine, and line the bottom with parchment paper.
- 8 Pour 1 ladle of batter into the pan and spread it into a thin, even layer. Bake using only the top heat for 5-7 minutes, until the surface turns golden brown.
- 9 Remove the pan and press down on the surface of the layer with a spoon or spatula to compact it and make it even. Pour another ladle of batter on top, spread evenly, and bake again the same way.
- 10 Repeat the layering and baking process until all the batter is used up, usually resulting in 18-24 layers depending on how thick each layer is.
- 11 Once the final layer is baked, bake briefly with both top and bottom heat for 10 minutes so the inside is fully cooked through.
- 12 Remove from the oven and let it cool completely at room temperature before taking it out of the pan. Store in the refrigerator for at least overnight so the texture becomes firmer and easier to slice.
- 13 Slice with a sharp knife that has been warmed or wiped clean between each cut for neat, clean slices.
