Cannoli Siciliani, the iconic crispy tube-shaped pastry from Sicily, Italy! Crunchy, delicate fried pastry shells filled with sweet ricotta cream mixed with bits of pistachio and candied peel. One bite of cannoli is one bite of Sicily. Dolce vita in a tube.

  • 200 g Cannoli shells: all-purpose flour
  • 20 g sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 30 g cold butter
  • 1 egg
  • 50 ml Marsala wine or red wine
  • 1 tsp vinegar
  • Egg white, for sealing
  • Oil, for frying
  • Metal cannoli tubes (food-grade PVC pipe can be used instead)
  • 500 g Ricotta filling: fresh ricotta, drained overnight
  • 150 g powdered sugar
  • 1 tsp vanilla extract
  • 100 g dark chocolate mini chips
  • 50 g chopped pistachios
  • 2 tbsp chopped candied orange peel (optional)
  • Powdered sugar, for dusting

👩‍🍳 Instructions

  1. 1 Shells: mix together the flour, sugar, cinnamon, and salt
  2. 2 Add the cold butter and rub it in with your fingers until the mixture resembles coarse sand
  3. 3 Add the egg, Marsala wine, and vinegar
  4. 4 Knead briefly just until the dough comes together — don't over-knead
  5. 5 Wrap in plastic wrap and refrigerate for 1 hour
  6. 6 Filling: beat the ricotta until very creamy
  7. 7 Mix in the powdered sugar, vanilla extract, chocolate chips, pistachios, and orange peel
  8. 8 Stir until well combined, then chill
  9. 9 Roll out the dough very thin, about 2mm thick
  10. 10 Cut out circles about 10cm (4 inches) in diameter
  11. 11 Wrap each circle around a metal cannoli tube, sealing the edge with egg white
  12. 12 Fry in oil at 175°C (350°F) until golden and blistered
  13. 13 Remove from the oil, let cool on the tubes, then carefully slide the tubes out
  14. 14 Pipe in the ricotta cream using a piping bag right before serving
  15. 15 Dust with powdered sugar

💡 Tips

• Fill the cannoli RIGHT before serving — if filled too early, the shells will turn soggy

• The ricotta must be thoroughly drained overnight so the filling isn't watery

• Properly fried shells will have little blisters on the surface — that's the sign of the perfect texture
