- 4 pieces ketupat (compressed rice cakes)
- 8 pieces fried white tofu
- 150 g Sauce: fried oncom (fermented soybean cake)
- 100 g fried peanuts
- 5 curly red chilies
- 3 clove garlic
- 3 tbsp sweet soy sauce (kecap manis)
- 2 tbsp shaved palm sugar
- 1 tsp salt
- 500 ml water
- To serve: fried shallots
- crackers (kerupuk)
- sliced celery leaves

👩🍳 Instructions
- 1 Fry the tofu until golden brown, then cut into cubes
- 2 Cut the ketupat into cubes
- 3 For the sauce: blend the oncom and peanuts coarsely
- 4 Grind the chilies and garlic into a smooth paste
- 5 Sauté the ground spice paste, then add the oncom-peanut mixture
- 6 Add the sweet soy sauce, palm sugar, and salt
- 7 Pour in the water and stir well
- 8 Cook for 10 minutes until the sauce thickens
- 9 Arrange the ketupat and tofu on a plate
- 10 Pour the sauce over
- 11 Sprinkle with fried shallots and celery leaves
- 12 Serve with crackers
💡 Tips
• The oncom-peanut sauce needs to be thick — this is what makes Kupat Tahu Padalarang different from other versions
• The tofu should be fried until crispy so it soaks up the sauce nicely
• You can use lontong (rice cakes) instead of ketupat if you don't have any
• The dominant sweet soy sauce flavor is the signature touch of Padalarang-style kupat tahu
