- 1 young corn (cut into 4 pieces)
- 100g melinjo (gnetum nuts)
- 50g peanuts
- 1 chayote, cut
- 100g long beans, cut
- 50g melinjo leaves
- 1 tomato, cut
- 1 liter water
- 5 Seasoning: shallots
- 2 cloves garlic
- 2 inch pieces kencur (aromatic ginger)
- 1 tbsp palm sugar
- 2 tbsp tamarind pulp
- 1 tsp salt
- 1 inch piece ginger
- to taste shrimp paste (terasi)

- 1 Boil the water until it comes to a rolling boil.
- 2 Grind the shallots, garlic, kencur, ginger, and shrimp paste into a smooth paste.
- 3 Add the ground seasoning paste into the boiling water.
- 4 Add the peanuts and melinjo nuts — these need more time to cook.
- 5 Cook for 10 minutes, then add the corn and chayote.
- 6 Cook for another 10 minutes, then add the long beans.
- 7 Add the palm sugar, tamarind pulp, and salt.
- 8 Add the tomato and melinjo leaves.
- 9 Cook for 3 minutes, then adjust the seasoning to taste.
- 10 Serve warm with steamed white rice.

• Add the vegetables in stages according to how firm they are, so everything cooks evenly.
• Tamarind pulp is what gives the soup its refreshing tang — adjust the amount to your taste.
• Melinjo nuts and peanuts need to cook longer than the other vegetables.
• Sayur asem tastes best eaten the same day it's made — try not to reheat it more than once.
