- 1 whole free-range chicken (cut into 8 pieces)
- 8 Spice paste: shallots
- 5 clove garlic
- 3 inch piece turmeric
- 2 inch piece ginger
- 1 inch piece galangal
- 2 tsp coriander seeds
- 1 tsp salt
- 1/2 tsp pepper
- 3 leaves Simmering seasoning: bay leaves
- 2 stalks lemongrass
- 3 leaves kaffir lime leaves
- 300ml water
- Oil for frying

👩🍳 Instructions
- 1 Blend all the spice paste ingredients until smooth.
- 2 Mix the chicken with the spice paste, stirring until evenly coated.
- 3 Put it in a pot together with the bay leaves, lemongrass, kaffir lime leaves, and water.
- 4 Simmer over low heat for 30 minutes until the seasoning soaks in and the water reduces.
- 5 Remove the chicken and drain until completely dry.
- 6 Heat plenty of oil.
- 7 Fry the chicken until the skin is golden brown and crispy — about 5-7 minutes.
- 8 Drain on a wire rack.
- 9 Serve hot with rice, sambal, and fresh raw vegetables (lalapan).
💡 Tips
• Free-range chicken tastes better than broiler chicken — the meat has more flavor.
• Simmer it in the seasoning first so the flavor soaks all the way to the bone.
• Drain until completely dry before frying so it doesn't splatter.
• Fry in plenty of hot oil so the skin crisps up right away.
