👩🍳 Instructions
- 1 Grill the oncom over coals or on a nonstick pan until fragrant and the color changes
- 2 Grind the shallots, garlic, and bird's eye chilies until smooth
- 3 Sauté the ground seasoning paste in oil until fragrant and cooked through
- 4 Add the grilled oncom, crumbling it with a spatula while stirring
- 5 Add the salt and palm sugar, stir until well combined
- 6 Cook for 3-4 minutes until the seasoning is absorbed into the oncom
- 7 Mix the sautéed oncom into the hot rice
- 8 Stir until the oncom is evenly distributed throughout the rice
- 9 Serve on a banana leaf with fried salted fish and fresh raw vegetables
💡 Tips
• The oncom should be grilled first so its aroma comes out and its texture is better
• Use fresh red oncom — avoid oncom that's overly fermented
• The amount of bird's eye chilies can be reduced or increased to taste
• The rice needs to still be hot so the oncom mixes in evenly
