- 500g beef outside round (has luar)
- 400ml thick coconut milk
- 5 Ground spice paste: shallots
- 3 clove garlic
- 2 inch piece turmeric
- 1 inch piece ginger
- 1 inch piece galangal
- 1 tsp coriander seeds
- 5 candlenuts
- 2 tbsp palm sugar, shaved
- 1 tsp salt
- 3 leaves bay leaves
- 2 stalks lemongrass, bruised
- Oil for frying

👩🍳 Instructions
- 1 Boil the beef whole until tender — about 45 minutes
- 2 Remove and pound with a pestle so the fibers open up
- 3 Slice the beef against the grain, about 1cm thick
- 4 Grind all the spice paste ingredients until smooth
- 5 Sauté the spice paste with a little oil until fragrant
- 6 Add the bay leaves and lemongrass
- 7 Pour in the coconut milk and add the beef
- 8 Cook over low heat until the coconut milk is absorbed and dries up
- 9 Remove the beef and fry briefly in hot oil until browned
- 10 Serve with rice and fresh raw vegetables (lalapan)
💡 Tips
• Pound the beef after boiling so the fibers open up and the spices soak in
• Cook with the coconut milk over low heat and be patient — don't rush it
• Fry briefly just to finish — don't let it get tough
• Gepuk keeps for 3 days in the fridge — just re-fry briefly before serving
